How about ending the year with a Puerto Rican spin on eggnog.  Salud!

Ingredients

  • 1 can sweetened, condensed milk
  • 2 cans unsweetened coconut milk
  • 1 1/2 teaspoon vanilla
  • 4 egg yolks
  • 1/4 teaspoon cinnamon
  • 3/4 cup white rum -- as much as you see fit

Instructions

  1. Blend all ingredients together.
  2. Refrigerate until cold.
  3. Serve, garnishing with additional cinnamon

At the moment, I can't think of a better summertime cocktail than a minty and slightly tart mojito. In fact, we grow our own mint specifically to ensure that we never run out of this essential ingredient.

Notes:

When juicing citrus, we first roll it firmly on a hard surface. This breaks up some of the membranes, allowing for easier juicing.

Don't be too aggressive with the mint and lime when muddling. You want to gently bruise the mint. Give it too much of a beating and the mint turns into a shredded mess. The drink can also turn bitter.

Ingredients

  • 12 mint leaves
  • 1 tablespoons sugar
  • 1 lime
  • 1 1/2 - 2 ounces white rum
  • 3 ounces club soda
  • Roughly crushed ice

Instructions

  1. Add mint, sugar, and juice from 1 lime (2 tablespoons) to a 10-ounce highball or collins glass. Muddle gently to release the lime juice and bruise the mint. Again, you don't want the mint to be shredded, just bruised.
  2. Add the rum and club soda. Stir to blend the flavors. Fill remainder of glass with crushed ice.
  3. If you don't like pieces of mint and lime in your drink, strain before serving.
