These cookies are all about texture. They are delicately crumbly and are amazing either on their own or with coffee or tea. They also happen to be incredibly easy to make. While we like these in their original flavor, feel free to experiment by adding a bit of vanilla, cocoa, espresso powder, or even matcha powder.
Makes about 3 dozen.
40g powdered sugar
125g potato starch, sifted
80g flour, sifted
1. Preheat oven to 350 degrees. Line baking sheet with parchment.
2. Cream butter and sugar
3. Add sifted flours
4. Roll into balls
5. Using a fork, press to flatten and score with tines.
6. Bake for 15 min. Transfer cookies to wire rack to cool.
